PEACE with a Piece of Food
This dish was made with my Brazilian host for the evening, Edgigio. He says this is what any Brazilian mother will make for you if you are feeling sick.
Canja de Galindha (Chicken Soup)
1 cup vaporized rice
500 g chicken breast
150 g carrots
20 mint leaves
2 L chicken broth
2 tbsp olive oil
dash of sugar
First chop the chicken into small pieces and squeeze the lemon juice onto them, then add with the oil to a large pot. Cook until browned, adding a dash of sugar to the top of the chicken helps it to brown nicely.
Once browned, add the rice in and really mix it around to have the rice absorb some of the chicken flavor. Now add the broth and cook on medium until you bring it to a boil.
Next, add the carrots and onion and cook for another 10 minutes. When the soup is ready place the mint leaves into the mixture and stir a bit and serve.
This soup was delicious even though I wasn´t sick! Its simple and being that it was a really windy day it was a perfect meal. Edgigio opened his home and after we even shared a glass of port and had some guava brazilian marmalade. It was fun to hear Edgigio´s stories about eating this soup and instantly feeling better. I´m not sure about its medicinal properties, but it reminded me of my own mother and Chicken Noodle Soup when I was sick. He also told me about another Brazilian national dish, Feijoada, which is a black beans and meat stew that I hope to try someday.
